Just to promote some discussion for the fun of it, I thought I'd do a series of forum posts based on the 53 genres listed in VGG.* Here's a GeekList of all 53 threads.

This thread's genre: Fighting

Listed below are the top-ranked games in this genre. How does the list fit with your experience?

Have you played any of these games? Which ones? Do you agree or disagree with the ranking? How would you rank the games listed? Are there other games in the genre that you think should be in the top ranks?

And by the way, what do you think of this genre in general?

Super Smash Bros. Melee
Super Street Fighter II
Super Smash Bros. Brawl
Super Smash Bros. for Nintendo 3DS and Wii U
Super Smash Bros.
SoulCalibur
SoulCalibur II
Mike Tyson's Punch-Out!!
Street Fighter II
Marvel vs Capcom 2: New Age of Heroes

*In case you don't know how to find the VGG genres and rankings, hover over Browse at the top of the screen, then click Genres. Click a genre, and scroll down to Linked Items. Click the Sort window, and sort by Rank.

Someone likes the Super Smash Bros. series.

Ones I like best from that list are Super Smash Bros. Brawl (I admit), Soulcalibur II, Mike Tyson's Punch-Out!! and Street Fighter II.

A few things:
1) Isn't Mike Tyson's Punch-Out!! more of a "boxing" game rather than a "Street Fighter" style game? Heck, it's technically a puzzle game with boxing trappings, what with opponents only being defeated by responding to certain opponent routines and moves, and countering in specific ways.
2) I never got into MvC2. It's got a nicer style to it than the weird "3D Comic Book" thing of the third game, but for whatever reason I prefer that third game overall.
3) Nae Mortal Kombat?

An off-the-cuff list of the major series:

Street Fighter
Mortal Kombat
Smash Bros.
Tekken
Marvel Vs. Capcom
Soul Calibur
Guilty Gear
King of Fighters
BlazBlue
Injustice

All of those are still backed by major developers and publishers (although MvC's most recent iteration was a fiasco so I doubt Marvel and Capcom are on good terms).

Virtua Fighter, backed by Sega, had a long and storied history but has been defunct for a long time.

Some indie darlings: Skull Girls & UNIST/UNIEL.

Some spinoffs/crossovers: Street Fighter X Tekken, Dragonball FighterZ (basically the Guilty Gear dev being licensed to make a DBZ product in the vein of Marvel Vs. Capcom).

Some goofy stuff themed from other series: Pokken (what if Pokemon was a fighting game?), Dissidia (what if Final Fantasy was a fighting game?), Persona Arena (what if Persona was a fighting game?).

Street Fighter retains a special place in my heart, although I enjoyed following the scene for SFIV a bit more than I do for SFV.

Of the modern fighting games (setting aside Smash), Tekken 7 is probably the best at what it does.

Yeah, but if there were multiplayer it would just be a fighting game that required split screen or multiple monitors. Winning single player rounds of Street Fighter fits your description as well, it just feels more fluid, fast, and varied.

At least there aren't any beat-em-ups on the list!

Others have explained it better than I have (there's a great Fighting Game thread going on as well), but yeah, I will always give a Fighting game a look. Of the ones listed, I have little experience with Smash Bros, but man I am an old school SFII fan!

I have only ever liked Smash Bros. games. It has the lowest barrier for entry but still has varied characters that play very differently. I never understood the point of making a series of inputs to do special things when you could just do it the smash way. Plus, the novelty of the "knock them off the screen" mechanic is cool.

I had to stop playing Tekken games, because I got so worked up. But I liked the game. Especially since I got the background stories from the characters.

Years back there was a kind of fighting game online, where you set up what your character should do, then the other player needed to set it up, before the characters fought. Once done, we could see how the fight went on. Can`t recall what the game was called...
