I enjoy this genre. HuniePop is really interesting, a cross between a dating sim and a match 3 game. It's, uh, pretty sexy tho'.

Hatoful Boyfriend: A School of Hope and White Wings is the funniest dating sim and worth checking out if you like bad jokes.

This is NOT a genre I would choose to play; it's usually just another visual novel type game, maybe with a lot less story and some silly minigames. I do like Azure Dreams, though that game is more of a roguelike dungeon crawl with some dating sim aspects added.

Sounds like you didn't play it enough! The dating-sim-type stuff is just in-between visits to the tower (where the REAL roguelike gameplay happens), but it is there. I think it really starts after you build a couple of new buildings in the town where you can have different interactions with the other girls in town.
