It's May, which means between Taco De Mayo and Cinco De Mayo Tacos are getting eaten in my house.

Last night, when I told my daughter we were having tacos for dinner, she got very sad because she is not allowed to eat dairy at the moment and she says that cheese is the most important taco topping. I disagreed with her, and gave her many other topping options that she is allowed to have. (Guacamole, salsa, peppers, tomatos, lettuce). She agreed to give it a try and loved her queso-free tacos.

Obviously all tacos need a shell and your main taco filling, what other taco toppings do you consider essential?

I'm not good with moderation. I always put too much in my taco and wind up with not enough room for all the toppings.

So while I can't tell you the most essential topping, I can tell you the least essential topping. And that is lettuce. I never have room for lettuce and that is ok.

But if you leave the lettuce leaf whole, you can use it on top of the taco to hold in all the other taco toppings that are trying to escape. (That's what I do).

You can also do double-wrapped tacos, where you have a warmed flour tortilla, with a light spread of refried beans, and then a hard taco shell inside of that. Can throw a little cilantro in there as well.

Everything else is unnecessary. I guess technically the lettuce is unnecessary as well.

If cow milk is the problem as it is for my wife, then goat cheese is the next best thing. Otherwise Daiya is a terrific nondairy alternative.

SALSA. Gimme that flavorful heat. The taco seems to build up from the meat, but the meat (if we're talkin' standard ground beef, shredded chicken, or sauteed veggies) is usually the least interesting part of the taco. Cilantro, cheese, tomato (yes in addition to salsa), cheese (accidentally listed twice, but was it really an accident?), beans, jalapenos, optionally lettuce, are what really make tacos yummy for me.

But the meat is almost always spiced to begin with. So as far as I'm concerned, the only essentials are the taco shell and a spicy-meat filling. The rest are all optional condiments.

But if we're talking toppings, yeah--salsa. As to cheese, I doubt I'd even notice if it was missing. In a good, spicy taco, you can't taste the cheese anyway. And the lettuce is definitely least important.

Tomato; either cubed or sliced thinly. Essential.

And Lettuce is another given; it isn't a (crunchy corn) taco without it.
I have a hard time thinking of tortillas becoming tacos, even though that's totally authentic.
